This coffee is exactly what we had in mind when we launched Norma, and it is a pleasure to be roasting Abner and Ana’s coffee from their farm Sitio Baixao da Serra in Caldas, Minas Gerais. Brazil is a country famous for its mega-farms and commodity grade coffee, however it produces a wealth of high quality lots from small family-run farms. Getting these coffees to market is difficult as the country is set up for large-scale commodity production and export. 

It is therefore so exciting to be able to offer this lot, a high quality single varietal Yellow Catuai from a small family run farm, just 2 hectares big. Everything is focused on quality; it is small scale, low intervention and kind on the land. It is a great example of the type of farm we want to be working with: small, and producing excellent coffee.

More Coffee Information

This is a yellow Catuai (our favourite kind of Catuai!) prepared as a natural, with full drying in the sun - it is all meticulously done by hand, no mechanical drying, for guaranteed sweet flavoured coffee. With an annual production of 100 bags across only 2 hectares, Abna and Ana are focused on quality not quantity.

Pattern is an elevated House-style coffee, a higher quality coffee that still hits all the chocolate and sweet notes you want from a House coffee.

Brew Guide

We recommend brewing this coffee at a ratio of 60g/1 litre for filter and a ratio of 1:2 for espresso (so 18g of coffee for 36g of espresso)

Espresso: start at 18g in, 36g out. Aim for good body, sweetness and a smooth finish. If it’s bitter or drying, shorten the yield slightly or grind coarser. If it’s sour or underdeveloped, extend the yield or grind finer. If it lacks intensity, increase the dose slightly or tighten the ratio.

Filter: start at 1:16 (e.g. 20g coffee to 320g water), Aim for a balanced cup with chocolate, nuts and low acidity. If it tastes heavy or dull, grind slightly coarser. If it feels thin or lacks sweetness, go to 1:15 or slightly finer.

We roast and dispatch coffee on Tuesday and Thursday. Any order placed before 9am on those days will be dispatched the same day.

Any UK purchases will be charged a flat rate of £3.99. Sometimes deliveries can be delayed. All orders will go out on a 24hr tracked service. See below for more information on roast dates and shipping.

Roast Dates

We believe rested coffee tastes the best, which is why we will sometimes send out coffee up to three weeks post-roast. This will have no negative impact on flavour, in fact it tastes better rested.

More often than not (due to workflow) our coffee will be roasted the same week as dispatch. If you can wait, we recommend resting the coffee a little before brewing (especially when brewing espresso).

Subscription Information

Any recurring subscription orders will be generated one month (or other specified time) after the initial order. They are then dispatched the following Tuesday or Thursday on a 48hr service.
