Sourced from a handful of small farms in the Tatama national park in the north-west of Risaralda, this coffee is decaffeinated using the sugarcane process. Ethyl acetate (naturally found in coffee cherries and many other fruits) binds with the caffeine in the coffee when the beans are delicately steamed. This low intervention method enables decaffeination whilst keeping all the sweetness, body and flavour inherent in the coffee without nasty chemicals.

This coffee comes from a group named Igualdad Mujeres Hombres which translates as 'Equality Women and Men'. IMH are focused on addressing inequality in coffee production and rebalancing value in the supply chain, particularly by improving income stability for producers and creating more opportunities for women, who are essential to production but underrepresented in leadership.

We recommend brewing this coffee at a ratio of 60g/1 litre for filter and a ratio of 1:2 for espresso (so 18g of coffee for 36g of espresso)

We roast and dispatch coffee on Tuesday and Thursday. Any order placed before 9am on those days will be dispatched the same day.

We believe rested coffee tastes the best, which is why we will sometimes send out coffee up to three weeks post-roast. This will have no negative impact on flavour, in fact it tastes better rested.

More often than not (due to workflow) our coffee will be roasted the same week as dispatch. If you can wait, we recommend resting the coffee a little before brewing (especially when brewing espresso).
