Karimikui is one of Kenya's most regarded cooperatives, this coffee is from a number of small producers farming on the volcanic slopes of Mt. Kenya in Ngariama, Kirinyaga County. This one is a classic, crisp washed Kenya, with bright blackcurrant and rhubarb acidity along with a jammy sweet and creamy body.

More Coffee Information

Smallholders selectively handpick only ripe cherry and deliver it to Karimukui Factory. At intake, the Cherry Clerk oversees meticulous visual sorting and floating, accepting only dense, ripe cherry.

After intake, cherry is pulped and fermented for approximately 12 to 24 hours. Following fermentation, coffee is washed in clean water and soaked for 24 hours. After soaking, parchment is laid to dry on raised beds. Workers rake parchment frequently to ensure even drying. They cover drying parchment during the hottest time of day, to maintain slow, even drying and at night, to shelter parchment from moisture. It takes approximately 7 to 14 days for parchment to dry.

Brew Guide

For filter: start at 1:15 (e.g. 20g coffee to 300g water), medium grind, 95–96°C. Aim for a juicy, high-clarity cup with blackcurrant, citrus and a winey acidity. If it tastes sharp or thin, move to 1:14 or grind slightly finer. If it feels muted or dull, go coarser or drop the temperature a touch.

For espresso: start at 18g in, 42g+ out (around 1:2.3) in 28–32 seconds at 93–95°C. This should produce a bright, syrupy shot with blackcurrant and a tomato-like acidity. If it leans sour or thin, grind finer or extend the shot time. If it turns harsh or astringent, lower the temperature or shorten the ratio slightly. If it lacks sweetness, reduce the dose a touch and lengthen the yield.

Roast Dates

We believe rested coffee tastes the best, which is why we will sometimes send out coffee up to three weeks post-roast. This will have no negative impact on flavour, in fact it tastes better rested.

More often than not (due to workflow) our coffee will be roasted the same week as dispatch. If you can wait, we recommend resting the coffee a little before brewing (especially when brewing espresso).
