We believe Peru has long been under-estimated as a quality coffee producing nation. This coffee from Marino proves that the micro farms in remote northern Peru can produce some of the best coffees in the world.

This one is a very jammy coffee, with ripe red fruits.

Marino is part of a new generation of growers in the region who are passionate about quality as a means of increasing income.

Natural lots are dried for approximately 25 days. No chemical products are used for the control of pests and diseases. Marino’s goal over the next two to three years is to become more competitive through coffee quality while maintaining productivity and moving towards a more sustainable form of agriculture.

Brew Guide

For filter: start at 1:15 (e.g. 20g coffee to 300g water), medium-coarse grind, 94–96°C. Aim for a balanced cup with ripe fruit, chocolate and a fuller body. If it tastes too heavy or boozy, move to 1:16–1:17 or grind coarser. If it feels flat, go slightly stronger or finer.

For espresso: start at 18g in, 36–40g out (around 1:2–1:2.2) in 26–32 seconds at 92–94°C. This should produce a dense, sweet shot with cocoa and soft fruit. If it leans boozy or overripe, extend the yield slightly or lower the temperature. If it’s sharp or under-extracted, grind finer or push the yield a touch. If it lacks clarity, reduce the dose slightly and extend the ratio.

Roast Dates

We believe rested coffee tastes the best, which is why we will sometimes send out coffee up to three weeks post-roast. This will have no negative impact on flavour, in fact it tastes better rested.

More often than not (due to workflow) our coffee will be roasted the same week as dispatch. If you can wait, we recommend resting the coffee a little before brewing (especially when brewing espresso).
